Vegan Pizza and Movie Night!

 


    I had a wonderful Friday evening enjoying a Vegan pizza from Papa Murphy's and watching a movie with my big brother, Ben, the oldest of my 4 siblings. I always love pizza night because it means minimal mess is made in the kitchen. For our pizza we just got a standard Vegan cheese pizza from Papa Murphy's and dressed it with pepperoncinis, sundried tomatoes, and kalamata olives. 

    



    We garnished it with some of my homemade vegan parmesan (I'll link a video of the recipe down below.) and red chili flakes. The salad was made with Fresh Express Organic Herb Salad Greens...


        And the tomatoes were Signature Farms vine ripened sugar tomatoes...


    The dressing was litehouse lemon herb dressing...
    For a little extra protein and texture, I topped my salad with a few Open Nature pecans

And then I sprinkled on a bit of vegan parmesan and fresh cracked pepper to complete a light side salad. I got my Vegan parmesan recipe from one of my favorite Vegan youtubers, CheapLazyVegan. It has even impressed my non vegan friends. 


I highly recommend Rose's channel to anyone starting out their vegan journey. 

  My brother and I also baked some Alexia sweet potato tots for a little extra tastiness.


Our beverage tonight was GT's guava kombucha.


    With such a wholesome quick and easy dinner prepared we cozied up on the couch to watch and absolutely hilarious romantic comedy my brother picked out called The Wrong Missy on NetFlix.


    After dinner my 6'3" brother helped me do a few things around the house like screwing in the light cover on the ceiling in my bedroom, emptying out old, expired pasta from my back top cupboard, and inspecting the big screen TV I scored at the Humane Society Thrift Store for free the other month. All I need to get the TV working is to find a universal remote compatible with it, find wherever I miss placed the wall mount (I think it's in my storage,) and get a surge protector.


        My brother being naturally a clean and organized person also coached me on a few things I can do to help declutter and I was actually happy to hear his suggestions. Soon we plan to donate the 2 bulky entertainment centers cluttering my living room to Goodwill and instead the computer desk will also function as an entertainment center and the TV will be mounted on the wall above my regular desktop computer screen so I can just stream straight to the TV. 


    Here is my log from My Fitness Pal today. I ended up eating 4 slices of pizza (a.k.a. half a pizza) while watching a movie. I don't think that was too unreasonable for Friday night pizza night. But I did go over on sodium, so I may need to drink more water and refrain from salty foods for the rest of the evening. There are 2 pieces of pizza and some tots left in a meal prep box that will make a lovely lunch for tomorrow.
